How to Make S'mores Dip; Bake in a Skillet and an Oven

1/2 TBSP. Vegetable Oil

1 1/2 CUP of Chocolate Chips

10 Peanut Butter Cup

15 Jumbo Marshmallow (cut in half)

Place in oven; bake for 450°F for 5-7 minutes

Remove from oven and wait for 5 minutes before serving.

Mane Event, Taste of Arlington Heights, August 7-8, 2015 in Downtown Arlington Heights

The Mane Event for Arlington Heights' downtown block party is scheduled for Friday, August 7 and the Taste of Arlington Heights is scheduled for Saturday, August 8, 2015. Both events are located Vail Avenue and Campbell Street in downtown Arlington Heights -- home to a number of great restaurants.

The annual block party is one of the biggest weekend celebrations of the summer with live music from favorite local bands, wonderful food from local restaurants, a business expo at the Mane Event, and children's entertainment.

Mane Event (yes, it is spelled M-A-N-E in reference to a horse’s mane) and the Taste of Arlington weekend kicks off the Million Week in recognition of the upcoming Arlington Million, the premier race event held the following weekend at Arlington International Racecourse on Saturday, August 15. Activities will be held at Arlington International Racecourse during the week leading up to the Arlington Million.

Sticking to the Pan Can Be Good When You're Trying to Make Better Pan Sauce


America's Test Kitchen Science: To Make a Better Pan Sauce, Break All the Rules.

A pan sauce takes advantage of the flavorful browned bits, or fond, left in a pan after searing food. There are rules we follow when making such a sauce, but we decided to see what would happen if we broke all those rules.

The rules in this video apply to chicken with skin.

These are 3 Rules to Break

Pat chicken dry
Use 1 tablespoon oil in 12-inch skillet
Add chicken when oil starts to smoke


Food sticks when "sulfur-containing amino acids in the food bind with the iron atoms in the pan." The bonds are limited when there is a significant amount of oil, and the bonds break when there is a significant amount of heat. When more bonds form, there is more fond left behind in the pan.

Cooler pans allow more fond to form because bonds allow to adhere longer.

Placing wet skin in the pan causes the pan temperature to drop.

So Here are the 3 Rules ...
(to get more fond and then better pan sauce)

Don't pat down the chicken
Use one-quarter tablespoon of oil
Add chicken when the oil starts to shimmer
